Of course, Sapphire can change the colour by heat. The reason is recharge of the impurity ions at crystal. But it is not the chemical process, but physical. And I didn't hear about using of the chemicals for such change of the colour. You can have a different colour if you will be to add the different impuruties to the sapphire by growing. For example, the doping by Cr3+ white sapphire you will be to have in result Ruby (red colour).
